STEAK FAJITAS  INGREDIENTS: 2 pounds skirt, flank, sirloin, or hanger steak sliced into ½ inch strips 1 red pepper deseeded and sliced into thin strips 1 green or yellow pepper deseeded and sliced into thin strips 1 medium onion peeled and sliced into thin strips 3 tablespoons olive oil 1 tablespoon lime juice 1/2 teaspoon chili powder 1 teaspoon ground cumin pinch cayenne pepper 1/2 teaspoon Kosher salt 1/2 teaspoon fresh ground black pepper 2 cloves garlic minced 6-8 tortillas warmed INSTRUCTIONS: Place the steak into a sealable bag. Place the peppers and onion into a separate sealable bag. Add the olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and garlic to a jar with a screw top or tight fitting lid. Shake until well combined. Local grocery store had their bone in Prime Rib for $4.76 per pound. A $130 roast cost me $37. I couldn’t pass it up. Life is good in the trailerhood.  Prime Rib Ingredients  1 Prime Rib 3-10 lbs Coarse Kosher salt Black pepper 1 Stick Butter  1/2 Onion diced 1/2 Onion sliced 3 Cloves garlic whole 3 Cloves garlic minced 1 Tbsp Italian seasoning  1 Tbsp Dill 1 Oven bag I cut the bones off to ease the carving after cooking. Generously salt and pepper all sides of the roast and bones section. Set the roast on top of the ribs. You can tie the ribs on with kitchen twine. Let the roast reach room temperature. I generally let it sit out for 2 hours. Once the roast reaches room temperature, prepare the butter paste. Soften the butter and mix in the diced onion, minced garlic, Italian seasoning and dill. KENNY’S TOMATO SOUP  Ingredients  1 can San Marzano Tomatoes  1 can Tomato Purée  2 tbsp butter  2 tbsp butter  4 cloves garlic minced  1/4 sweet onion finely diced 2 tsp dried basil  1/4 cup fresh basil diced  1 1/2 cup water 3/4 cup heavy cream 1/4 cup percorino cheese  1/4 cup parmigiana reggiano cheese  Sauté onions and garlic in butter and olive oil. Once tinder add tomatoes and purée. Add basil and bring to a boil. Simmer for 10 minutes. Mash the San Marzano tomatoes as they cook. Add water and bring to a boil. Add heavy cream and bring to a boil.

Defrost the frozen seafood. wash, strip and slice the kale; chop the remaining onion. cut the smoked mackerel fillets into smaller pieces. keep to one side. Heat the oil in a saucepan for 30 secs, add the chopped onions. fry until the onions appear translucent, then add the locust beans. stir for one minute to prevent sticking.
